onion, sliced celery, sliced carrot sliced chicken or veal bones parsley thyme bay leaf black peppercorns 1. Put all ingredients into a saucepan. Cover with water and bring to the boil slowly. Skim of any fat or scum. 2. Simmer for 3-4 hours skimming frequently and topping up the water level if necessary. The liquid should reduce to half the original quantity. 3. Strain, cool and lift off all fat.
