[Stocks and Sauces]

the neck of the turkey

giblets, well washed without the liver

1 onion, sliced

1 stick of celery, sliced

1 carrot, slcied

1 parsley stalk, bruised

1 sprig of fresh thyme

2 bay leaves

10 black peppercorns

  1. Put all ingredients into a large saucepan. Cover generously with cold water and bring slowly to the boil. Skim off any fat.

  2. Simmer slowly for 2-3 hours, skimming frequently and topping up water level if necessary. The liquid should reduce to half its original quantity.

  3. Strain and cool.
