Barbecue Sauce |

55g/2oz unsalted butter 4 spring onions, white part only, thinly sliced 1 teaspoon finely grated lime zest 1 teaspoon peeled and finely grated fresh root ginger juice of 2 oranges, strained 75ml/2˝fl oz soy sauce 30g/2oz soft light brown sugar 75ml/2˝fl oz water 2 teaspoons cornflour Melt the butter in a pan and add the spring onions. Sweat for 3 minutes or until soft. Add the lime zest, ginger, orange juice, soy sauce and sugar and simmer for 5 minutes. Mix the water with the cornflour and add to the mixture, mix well. Return to the heat and bring to the boil, stirring continuously, then simmer gently for 4 minutes. Use as required. |
