Tartare Sauce
[Stocks and Sauces]
150ml/¼ pint mayonnaise
1 tablespoon chopped capers, rinsed
1 tablespoon chopped gherkins, rinsed
1 tablespoon chopped parsley
1 shallot, finely chopped
a squeeze of lemon juice
salt and freshly ground black pepper
Mix all the ingredients together, season to taste
