[Stocks and Sauces]
1 tomato
4 tablespoons of oil
1 tablespoon water
1 tablespoon tarragon vinegar
a small pinch dry English mustard
a small pinch caster sugar

Chop tomato and whizz in a
blender with the remaining ingredients.

When well mixed push through a
sieve. If the dressing looks as if it may separate add a little very cold
water.
