[Stocks and Sauces]

1 x 400g/14oz can of tomatoes

1 small onion, chopped

1 small carrot, chopped

1 stick of celery, chopped

½ clove of garlic, crushed

1 bay leaf

parsley stalks

salt and freshly ground black pepper

juice of ½ a lemon

a dash of Worcestershire sauce

1 teaspoon caster sugar

1 teaspoon chopped fresh basil or thyme

  1. Put all the ingredients together in a pan, Cover and simmer over a medium heat for 30 minutes.

  2. Liquidize and sieve the mixture and return to pan.

  3. If its too thin then reduce it by boiling rapidly. Check the seasoning and add more salt or sugar if necessary.
