[Stocks and Sauces]

onion, sliced

carrot, sliced

celery, sliced

fishbones, skins, fins, heads or tails of white fish

parsley stalks

bay leaf

a pinch of fresh thyme

6 black peppercorns

  1. Put all the ingredients together into a pan, with water to cover and bring to the boil. Turn down to simmer and skim off any scum.

  2. Simmer for 20 minutes if fish bones are small or 30 minutes if large. Strain.
