[Stocks and Sauces]
1 small clove of garlic,
unpeeled
2 teaspoons olive oil
290ml/½ pint
yoghurt
1 tablespoon light soy sauce
2 teaspoons sesame oil
salt and freshly ground black
pepper
TO SERVE
55g/2oz black olives, pitted
1 tablespoon roughly chopped fresh
rosemary

Preheat oven to 200°C/400°F/Gas
mark 6.

Brush the clove of garlic with
a little olive oil, Place on a baking sheet and bake for 15 minutes. Peel
the garlic and mash well.

Mix the mashed garlic,
yoghurt, soy sauce, sesame oil and the remaining olive oil. Season to taste
with salt and pepper. Serve with rosemary and olives as required.
