[Stocks and Sauces]

a large handful of fresh mint

2 tablespoons caster sugar

2 tablespoons hot water

2 tablespoons wine vinegar

  1. Wash the mint and shake it dry. Remove stalks and chop the leaves finely. Place in a bowl with sugar.

  2. Pour in the hot water and leave for 5 minutes, to dissolve the sugar. Add vinegar and leave to soak for 1-2 hours.
