Tomato, Basil and Olive Oil Sauce

55ml/2fl oz olive oil
1 clove of garlic, flattened but not crushed
2 medium tomatoes, peeled, deseeded and finely chopped
4 large fresh basil leaves
salt and freshly ground black pepper
Place oil and garlic in a small pan and put over a low heat to infuse for a few minutes.
Remove garlic and add tomatoes and basil. Season to taste.
Serve warm.
