[Stocks and Sauces]

1 onion, finely chopped

1 tablespoon sunflower oil

2 tomatoes, chopped

1 red pepper, peeled (by singeing over a flame), cored, deseeded and cut into strips

1 clove of garlic, crushed

1 Bouquet garni 

6 tablespoons water

salt and freshly ground black pepper

  1. Cook onion in the oil until just beginning to soften. Add tomatoes, red pepper, garlic and bouquet garni. Add the water and season lightly with salt and pepper. Cover and cook on low for 20 minutes

  2. Liquidize until smooth and sieve. Chill.
