[Stocks and Sauces]
1 large onion, finely chopped
3 tablespoons oil
10 tomatoes, roughly chopped
salt and freshly ground black
pepper
a pinch of caster sugar
150ml/¼ pint white
stock
1 teaspoon fresh thyme leaves

Sweat onion in the oil in a
saucepan. Add tomatoes, salt, pepper and sugar, and cook for 25 minutes. Add
the stock and cook for another 5 minutes. Liquidize the sauce and push
through a sieve. If it is too thin reduce it by boiling rapidly.

Add the thyme, check the
seasoning and serve hot or cold.
