a knob of butter for greasing
2 tablespoons golden syrup
2 teaspoons fine fresh white
breadcrumbs
110g/4oz butter
110g/4oz caster sugar
grated zest of 1 lemon
2 eggs, beaten
110g/4oz self raising flour
a pinch of salt
1 teaspoon ground ginger
TO SERVE
custard or cream

Grease a pudding basin with
the knob of butter.

Mix together the syrup and
breadcrumbs in the basin.

In a mixing bowl cream the
butter until very soft, then add the sugar. Beat until light and fluffy. Add
the lemon zest.

Gradually add the eggs,
beating very well after each addition.

Sift and fold in the flour
with the salt and ginger.

Turn into a pudding basin and
steam for 1½ hours.

Turn out and serve with
custard or cream.
