2 ripe passionfruits
1 large ripe mango
3 tablespoons fresh orange juice
seasonal fruit, chilled, such as 4
kiwi fruits, peeled and sliced, 110g/4oz strawberries, hulled, 110g/4oz black
grapes, peeled and halved
4 sprigs of fresh mint

Process but do not liquidize
the passionfruit pulp, mango flesh and orange juice together for 2 minutes.

Sieve the purée
on to the base of 4 pudding plates so each one is well flooded.

Arrange the prepared fruit in
an attractive pattern on each plate. Decorate each with a sprig of mint.
