[Desserts]

125g/4oz plain flour

a pinch of salt

2 eggs

150ml/¼ pint milk

1 tablespoon oil

50g/1¾oz caster sugar

  1. Sift flour with salt into a bowl.

  2. Make a well in the centre exposing the bottom of the bowl.

  3. Put 1 whole egg and 1 yolk into the well and mix until smooth, gradually incorporating the flour and milk. The consistency of thick cream should be reached.

  4. Add the oil and the sugar and allow to rest for 30 minutes before using.

  5. Whisk the remaining egg white and fold into the batter with a metal spoon just before using.
