[Desserts]

570ml/1 pint milk

a few drops of oil

85g/3oz semolina

2 eggs

85g/3oz caster sugar

juice of 1 lemon

a few drops vanilla essence

4-5 tablespoons double cream

  1. Heat milk with the oil in a heavy pan and when boiling add the semolina.

  2. Reduce the heat and simmer for 10 minutes or until semolina is cooked, stirring from time to time. Remove from heat and allow to cool slightly.

  3. Separate the eggs. Whisk yolks with sugar until light and fluffy, then stir in the semolina mixture.

  4. Beat in the lemon juice, vanilla essence and cream.

  5. Whisk egg whites until stiff and fold them into the semolina mixture with a metal spoon.
