a nut of butter

1 tablespoon caster sugar

55g/2oz round (pudding) rice

570ml/1 pint milk

vanilla essence

freshly grated nutmeg

  1. Preheat oven to 150°C/300°F/Gas mark 2.

  2. Rub the butter round a pie dish. Put the sugar, rice, milk and vanilla essence into the dish. Sprinkle with nutmeg.

  3. Stir and bake in the oven for 3-4 hours, by which time it should be soft, creamy and have an evenly coloured brown skin.
