1 large orange per person

caramel sauce

  1. With a potato peeler pare the zest of 1 or 2 oranges very thinly, making sure there is no pith on the back of the strips. Cut into fine shreds.

  2. Simmer the shreds in the caramel sauce until soft and almost candied. They should be very sticky and quite dark.

  3. Peel the remaining oranges with a knife making sure all the pith is removed.

  4. Slice each orange crossways. Remove any pips.

  5. Place the oranges in a serving bowl and pour over the cold caramel sauce. Chill well.

  6. Scatter with orange shreds just before serving.
