4 x 170g/6oz cod fillets,
unskinned
salt and freshly ground black
pepper
seasoned flour
150ml/5fl oz olive oil
4 cloves of garlic, unpeeled
TO SERVE
lemon wedges

Preheat oven to 200°C/400°F/Gas
mark 6.

Bone the fish if necessary.
Season with salt and pepper and dip into the seasoned flour, skin side down.
Shake off excess flour.

Heat oil in a roasting pan.
Add the garlic and bake for 15 minutes. Remove from the oven and increase
oven temperature to its highest setting.

Set the oil in the tin on a
direct heat and add the cod, skin side down. Let it sizzle for 2 minutes.

Turn the cod and roast in the
oven for 3 minutes or until cooked (it should be opaque and firm).

To serve, place the cod on a
serving dish with the garlic and lemon wedges.
