[Fish and Shellfish]

4 x 170g/6oz cod fillets, unskinned

salt and freshly ground black pepper

seasoned flour

150ml/5fl oz olive oil

4 cloves of garlic, unpeeled

TO SERVE

lemon wedges

  1. Preheat oven to 200°C/400°F/Gas mark 6.

  2. Bone the fish if necessary. Season with salt and pepper and dip into the seasoned flour, skin side down. Shake off excess flour.

  3. Heat oil in a roasting pan. Add the garlic and bake for 15 minutes. Remove from the oven and increase oven temperature to its highest setting.

  4. Set the oil in the tin on a direct heat and add the cod, skin side down. Let it sizzle for 2 minutes.

  5. Turn the cod and roast in the oven for 3 minutes or until cooked (it should be opaque and firm).

  6. To serve, place the cod on a serving dish with the garlic and lemon wedges.
