[Fish and Shellfish]

675g/1½lb scampi

salt and freshly ground black pepper

lemon juice

oil for deep frying

seasoned plain flour

beaten egg

dried white breadcrumbs

TO GARNISH

deep fried parsley

  1. If using frozen scampi sprinkle with pepper and lemon juice and leave to defrost slowly.

  2. Heat oil until a crumb will sizzle and brown in it.

  3. Dip the scampi in the seasoned flour. Dip into the egg and then turn carefully in the breadcrumbs, to coat thoroughly. Deep fry until golden brown. Drain on kitchen paper and sprinkle with salt.

  4. Garnish with the fried parsley and serve immediately.
