[Fish and Shellfish]

4 cutlets or steaks of any white fish

oil for deep frying

2 teaspoons oil

55g/2oz plain flour

a pinch of salt

1 egg yolk

3 tablespoons warm water

TO SERVE

  1. Heat oil in a fryer until a crumb will gently sizzle in it.

  2. Mix the 2 teaspoons of oil with the flour in a shallow bowl and add salt, egg yolk and water

  3. Dip the fish into the batter, and lower into the hot oil. Increase the temperature of the oil.

  4. Fry for 4-10 minutes depending on the thickness of the fish.

  5. Drain well on kitchen paper and sprinkle lightly with salt. Serve with lemon wedges.
