4 cutlets or steaks of any white
fish
oil for deep frying
2 teaspoons oil
55g/2oz plain flour
a pinch of salt
1 egg yolk
3 tablespoons warm water
TO SERVE
lemon wedges

Heat oil in a fryer until a
crumb will gently sizzle in it.

Mix the 2 teaspoons of oil
with the flour in a shallow bowl and add salt, egg yolk and water

Dip the fish into the batter,
and lower into the hot oil. Increase the temperature of the oil.

Fry for 4-10 minutes depending
on the thickness of the fish.

Drain well on kitchen paper
and sprinkle lightly with salt. Serve with lemon wedges.
