[Starters]

 

225g/8oz onions, very thinly sliced

3 tablespoons olive oil

3 eggs

30g/1oz Parmesan cheese, freshly grated

salt and freshly ground black pepper

20g/ľoz butter

1.      Cook onions in the oil until reduced in quantity, soft and a rich golden brown. Tip into a sieve over a bowl, leave to cool.

2.      Beat eggs until lightly mixed. Mix all but 3 tablespoons of the egg with the onions, cheese, salt and pepper and mix well.

3.      Melt the butter in an 18cm/6in frying pan over a medium heat, add egg and onion mixture, and reduce the heat to very low.

4.    Cook slowly for 15 minutes. The eggs should be set and the surface runny. Pour over the remaining egg. Place under a hot grill until set but not brown. Slide onto a round dish and serve cut into wedges.
