[Staples]

45g/1½oz butter

675g/1½lb floury potatoes, very thinly sliced

1 small onion, very thinly sliced

salt and freshly ground black pepper

200ml/7fl oz white stock 

  1. Preheat oven to 170°C/325°F/Gas mark 3.

  2. Butter a pie dish and arrange potatoes in layers with the onion, adding salt and pepper as you go.

  3. Arrange the top layer of potatoes in overlapping slices.

  4. Dot with the remaining butter and pour in the stock. Press the potatoes down firmly the should be completely covered by the stock.

  5. Bake in the oven for about 2 hours or until the potatoes are tender and the top browned.
