[Staples]

675g/1˝lb potatoes, peeled

salt and freshly ground black pepper

about 100ml/3˝fl oz milk

55g/2oz butter

a little freshly grated nutmeg

  1. Boil potatoes in salted water until tender. Drain thoroughly.

  2. Push through a sieve and return to a dry saucepan. Heat carefully, stirring to allow the potato to steam dry.

  3. Push the potato to one side of the pan. Set the exposed part of the pan over the heat and pour in the milk. Add butter, salt, pepper and nutmeg. tilt the pan to allow the milk to boil and the butter to melt.

  4. When the milk is boiling, beat into the potato. Adjust seasoning if necessary.
