450g/1lb small potatoes, peeled and thinly sliced

45g/1½oz butter, melted

salt and freshly ground black pepper

freshly grated nutmeg

  1. Preheat oven to 200°C/400°F/Gas mark 6. Brush 12 individual patty tins with the melted butter.

  2. Arrange 1 slice of potato on the bottom of each patty tin and then neatly overlap the slices with more melted butter and seasoning. You need 8 layers of potatoes.

  3. Bake at the top of the oven for 30 minutes, or until golden brown and tender.

  4. Remove from patty tins and serve immediately.
