[Meat and Offal]

450g/1lb pork tenderloin, trimmed

1 tablespoon dry sherry

1 tablespoon soy sauce

1cm/½in piece of fresh root ginger, peeled and grated

1 bunch spring onions, cut into rings

110g/4oz baby sweetcorn, blanched

110g/4oz mangetout, topped and tailed

freshly ground black pepper

FOR THE SAUCE

1 tablespoon dry sherry

1 tablespoon soy sauce

  1. Cut pork into strips the size of your little finger and marinate in for at least 1 hour in the sherry, soy sauce and ginger.

  2. In a pan, stir fry the pork with a little marinade for 4 minutes.

  3. Add the remaining marinade and the spring onions, baby corn and mangetout. Cook for 4 minutes. Add sauce and reheat.

  4. Season with pepper and serve.
