[Meat and Offal]
675g/1½lb minced
beef
1 small onion, grated (optional)
2 tablespoons chopped fresh
parsley or mixed herbs
1 teaspoon Worcestershire sauce
(optional)
salt and freshly ground black
pepper

Preheat the grill.

Mix all the ingredients
together with a fork. Check the seasoning.

With wet hands shape the meat
into flattish rounds, making sure they are equal in size. Make a slight dip
in the centre. They will shrink and thicken when they cook.

Grill steadily, turning once.
Allow 3 minutes each side for rare burgers or 5 minutes for well done.

Serve on a warmed dish or
between heated soft rolls cut in half.
