[Meat and Offal]
1 small onion, finely chopped
1 teaspoon finely chopped fresh
parsley
1 teaspoon finely chopped fresh
rosemary
1 egg
salt and freshly ground black
pepper
1 x 170g/6oz pork chops, neatly
trimmed
dried white breadcrumbs
oil

Mix the onion, parsley,
rosemary and egg in a bowl. Season well with salt and pepper. Coat each pork
chop in the egg mixture and then dip into the breadcrumbs, covering them
well.

Heat the oil in a frying pan.
Add the chops and fry for 12-15 minutes, until golden brown on both sides
and tender all the way through.
