2.3kg/5lb sirloin or rib roast
beef
a little dry English mustard
salt and freshly ground black
pepper

Weigh the beef and calculate
cooking time (see stage 5 below).

Preheat oven to 220°C/425°F/Gas
mark 7.

Place the beef in a roasting
tin and sprinkle with salt, a little mustard and plenty of pepper.

Roast in the oven for 20
minutes.

Turn the oven temperature down
to 160°C/325°F/Gas mark 3 and roast for 20 minutes per
450g/1lb for medium meat or 10-15 minutes for very rare.
