New Potatoes Vinaigrette

675g/1½lb new potatoes

salt

1 sprig of fresh mint

4 tablespoons French dressing

150ml/¼ pint soured cream

1 tablespoon mayonnaise

2 tablespoons chopped fresh chives

  1. Boil potatoes with the mint and salt in a saucepan until just tender. Drain well and cut up if large.

  2. Toss the potatoes in the French dressing while still hot then leave to cool.

  3. Mix the soured cream and the mayonnaise. Add half the chives.

  4. Turn potatoes in this creamy dressing and tip into a salad bowl.

  5. Sprinkle with remaining chives.
