New Potatoes Vinaigrette

[Salads]

675g/1½lb small new potatoes

salt

1 small bunch fresh mint

French dressing

1 tablespoon chopped fresh chives

1 shallot, finely chopped

  1. Wash the potatoes and scrape them but do not peel. Cook in boiling salted water with a sprig of mint until tender. Chop 8-10 mint leaves finely.

  2. Mix the French dressing with the mint, chives and shallot.

  3. Drain potatoes well and toss immediately in the dressing, leave to cool and toss again just before serving. Decorate with fresh mint leaves.
