Tartare Dip
[Dips and Savoury Butters]
2 tablespoons chopped gherkins
2 tablespoons chopped capers, rinsed
1 tablespoon chopped fresh parsley
½ small onion, finely chopped
½ pint mayonnaise
salt and freshly ground black pepper
a squeeze of lemon juice
Mix gherkins, capers, parsley and onion with mayonnaise. Season to taste with salt, pepper and lemon juice.
