[Dips and Savoury Butters]

55g/2oz butter

2 teaspoons lemon juice

1 teaspoon finely chopped fresh parsley

salt and freshly ground black pepper

  1. Cream the butter, stir in lemon juice and parsley and season to taste with salt and pepper. Mix well and chill.
