85g/3oz caster sugar

150ml/¼ pint water

3 tablespoons raspberry jam

  1. Put the sugar and water into a saucepan and heat slowly until the sugar has dissolved. Then boil rapidly until the syrup feels tacky between finger and thumb.

  2. Add the jam, stir until smooth, then sieve to remove the pips.
