1 egg yolk
30g/1oz caster sugar
30g/1oz plain flour
225ml/8fl oz milk
2 drops of vanilla essence

Whisk the egg yolk with the
sugar. Add the flour and beat well.

Heat the milk and bring slowly
to the boil. Pour on the egg mixture. Mix well and return to the pan.

Bring to the boil, stirring.
Allow to thicken. Pour into a cold bowl and add the vanilla essence.
