[Pastry, Pasta and Batters]

Line the raw pastry case with kitchen foil or a double sheet of greaseproof paper and fill it with dried lentils, beans, rice or even pebbles or coins. This is to prevent pastry from rising during cooking. When the pastry is half cooked (about 15 minutes) the 'blind beans' can be removed and cooking continued. The 'blind beans' can be re-used indefinitely.
