170g/6oz plain flour
a large pinch of salt
˝ teaspoon baking powder
100g/3˝oz unsalted
butter
55g/2oz caster sugar
1 egg yolk
55ml/2fl oz double cream

Sift flour with the salt into
a bowl.

Rub the butter in until the
mixture resembles coarse breadcrumbs. Stir in the sugar.

Mix the egg yolk and cream and
add to the mixture.

Mix to a firm dough. Chill,
wrapped, in the refrigerator for 30 minutes before using.
