[Supper Dishes]
450g/1lb mashed
potatoes
450g/1lb cooked vegetables, such
as cabbage, onion, leek or Brussels sprouts
salt and freshly ground black
pepper
55g/2oz dripping or butter

Mix the potato and other
vegetables. Season to taste with salt and pepper.

Melt the dripping or butter in
a pan.

Put in the vegetable mixture
pressing it down flat in the pan. Cook slowly to heat through and allow a
crust to form on the bottom of the mixture.

Now flip the cake over onto a
plate and return to the pan to brown the second side.

Slide on to a warmed serving
dish and serve immediately.
