675g/1½lb swedes

30-55g/1-2oz butter

salt and freshly ground black pepper

freshly grated nutmeg

caster sugar (optional)

  1. Peel the swedes and cut into chunks.

  2. Boil in salted water until tender.

  3. Drain very well.

  4. Mash with a potato masher. Beat in the butter and salt, pepper and nutmeg and a little sugar if necessary.
